Herb Roasted Almonds

Add additional salt to taste

2 lbs. almonds or cashews

1/4 c. coconut oil

2 sprigs of fresh rosemary

2 tbsp. fresh chives

1 tbsp. salt

1 tbsp. paprika



Place the almonds or cashews on a baking sheet lined with foil. Spread them out evenly and bake at 350 for about 7 minutes. Meanwhile, place your coconut oil, herbs and spices in a saucepan and let simmer over light heat. Remove almonds from the oven and place in a large bowl. Pour the liquid mixture over the almonds and toss. Spread back out on the tray for the liquid mixture to settle in. Keep in a ziplock bag and enjoy!
