I made this last night when I had some people over to serve with vegetables. It was absolutely delicious. The original recipe that I found called for dried herbs but I used fresh herbs and a few extra goodies and it was amazing! This dip is great with fresh veggies, would be awesome with fish, etc. Here it is!
2 c. coconut milk
2 tbsp. fresh dill, chopped
2 tbsp. fresh Italian parsley, chopped
2 tbsp. fresh tarragon, chopped
1 tsp. garlic powder
salt and pepper (to taste)
Do not shake the cans of coconut milk. Open the can and scrape out the hardened part of the coconut milk. This is the part that forms in the top of the can. Scrape that out of both cans into a large bowl. )I added a little but of the coconut milk that was runnier as well just to make the dip a little smoother) Next, add your chopped herb, garlic powder and salt and pepper and stir together. The longer it sits, the better flavor it has.
