Paleo Swedish Meatballs


1.5 lbs. ground beef

1 green pepper chopped

1/2 tsp. salt and pepper

1 garlic clove chopped

2 tbsp. almond milk

1/4 tsp. season salt

1/4 tsp. onion powder



1/2 c. chopped onion

1 garlic clove chopped

1 pkg. mushrooms chopped

4 c. beef broth

4 tbsp. tapioca or arrowroot flour

2 cans coconut milk

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. cloves

salt and pepper to taste

2-3 tbsp. ghee or bacon fat



Combine all meatball ingredients and form mixture into meatballs. Place on a baking sheet at bake at 350 degrees for 1 hour or until they begin to brown.

Meanwhile, place your onion, garlic and mushrooms into a large skillet with your fat or butter and cook over medium heat. Cook until soft and onion is translucent. Reduce heat to low and add your coconut milk, beef broth and seasonings. Stir together well. Next, add your tapioca or arrowroot flour (which acts as your thickening agent) one tbsp. at a time while whisking it in. Cook over low for about 10 minutes and then add your meatballs. Allow the meatballs to cook in the mixture as well for another 10 minutes.

Serve over brown rice, cauliflower rice or cauliflower mash.
