Auburn Hash
I got this idea from various hash recipes involving sweet potatoes and bacon. This recipe uses Conecuh sausage which defines the South! This is great with pork as a side or even with eggs at breakfast. These simple ingredients are probably Dalton’s favorite so combining them together makes him a happy man!
Ingredients:
5 sweet potatoes, peeled and chopped into squares
1 yellow onion, chopped
1 pkg. Conecuh sausage cut into chunks
Olive Oil
Salt and pepper
Directions:
Add all ingredients to a baking dish. Drizzle with olive oil and add salt and pepper to taste. Be pretty generous with the salt and pepper because this makes a large dish. Toss well. Place in the oven and bake at 350 degrees for 30-40 minutes. The dish re-heats and refrigerates well!
